I guess I am just in the mood for fun recipes lately. Try these brownies out with your kids or grandchildren. Be sure to ask the teacher if it is okay if you plan to send these to school as treats. Some schools don’t allow homemade treats anymore and some teachers really frown on cupcakes.

We were dusting off some old files and came across these back-to-school cupcakes. They’re really brownies baked as cupcakes. The pencil, the apple, and book in the background, they’re all made with “Star Burst” and “Tootsie Roll” candies.
There’s an advantage to baking them in cupcake liners. They travel better in a kid’s lunch, they’re not messy, and they’re easy to pack.
So today, we’re experimenting. The ones to the right are filled with cream cheese filling. Fill them just as you would cupcakes: Snip the corner off the bag and poke it in the top of the cupcake and squeeze. You don’t have to be a kid–the folks in the store are loving these.
